Yes, you read that right, Grilled Pineapple and Avocado Noodles! The other day, I was chit chatting with a friend who loves BBQ. Now this guy is anything but vegan, but he was going on about how he thinks veggies are usually the best part of grilling. Seriously! (Ok, he was probably saying this because I was in his presence, but hey, it still counts).
Of course, I enthusiastically agreed. He started listing off peppers, zucchini, and onions as great grilling foods, so I decided to chime in with pineapple and avocado. This was totally news to him, and he was intrigued! Veggie intrigue. 1 point for the vegan. 😉
Grilling avocados makes them even more buttery and gorgeous. You can use them on a veggie burger, fill the pit hole with fresh salsa and just dive in with a spoon, or even make a grilled guacamole.
When you grill a pineapple, it takes this fruit from good to seriously, I'm drooling all over the kitchen good. The sugars in the pineapple caramelize and make it even sweeter. This is great for putting on a veggie burger a la Hawaiian style, for dessert with some coconut whipped cream, or as a brilliant addition to a fruit salad.
So many possibilities for delicious pineapple and avocados. This time I decided to use them to make a fresh and light summer noodle dish. You guessed it, Grilled Pineapple and Avocado Noodles. Oh boy, was that a good idea! It's almost like a fresh, sweet, and buttery salsa on Tofu Shirataki noodles. This is PERFECTION for a hot summer day. Bursting with fresh summer flavours and light enough to not weigh you down.
To make this recipe, grill up your pineapple. I used a grill pan because I do not have a BBQ, but if you have a BBQ use that as it will be even better with a little bit of that smoky flavour. Oh la la.
You can use a fresh pineapple (my preference), or buy the pineapple rings in a can, and it will still turn out just fine.
No, those aren't dragon eggs, those are avocados #gameofthrones. Grill your avocados face down. If your pan or BBQ is big enough, you can do everything at once.
Chop up the veggies! Red pepper, onion, cilantro, garlic, jalapeño, and lime, along with the pineapple and avocado. I grilled a couple of extra pieces of pineapple and avocado that I left whole, because food photography, but you don't need to do that if you don't want to.
Put everything in a bowl and lightly toss. So many colours! Cook the Tofu Shirataki noodles according to package directions. You can choose to serve them hot or cold. I decided on cold noodles, so I rinsed them with cold water once they were cooked. Add into the bowl with all of the veggies and lightly toss to combine. YAS!

Grilled Pineapple and Avocado Noodles

Ingredients
- 3 slices pineapple, ¾ inch thick, (about half of a pineapple)
- 1 ½ avocados,, cut in half with pit removed
- 1 red pepper,, chopped (about 1 cup)
- ½ red onion,, chopped (about ½ cup)
- 1 small handful cilantro, chopped ( ½ cup)
- ½ lime,, juiced (about 1 tablespoon)
- 1 clove garlic,, minced
- ½ of a jalapeño,, minced (or to taste)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 packages Tofu Shirataki Spaghetti Shape Noodles, (or sub other noodle of choice)
Instructions
- Grill the pineapple slices and avocado halves. I don't have a BBQ so I used a grill pan, but if you have a BBQ go for that because the flavour will be even better! Grill for a few minutes on each side of the pineapple until grill marks are formed. Do the same with the avocado, only grilling on face side down.
- Prepare the veggies by chopping up the 3 pineapple slices, 3 halves of avocados. Add that to a large bowl with the red pepper, red onion, cilantro, lime juice, garlic, japaleno, salt, and pepper.
- Prepare the Shirataki noodles according to the package directions. You can choose to serve the noodles hot or cold, both are great, but I choose to serve them cold. Drain and rinse with cold water to cool the noodles. Toss the noodles with the veggies and serve with an extra slice of pineapple and a grilled avocado half for garnish.

Rinsing and cooking Definitely help reduce the smell! I think they use to even say something about that on the package.

I can't wait to try this! But I'm going to try it with vermicelli size yam noodles from the asian market. I've bought a few packs of shirataki over the years but it never made it to my mouth. All I can smell is fish! Does anybody know if rinsing it and boiling it removed the smell?

Oooh sounds delicious! The brand I used didn't smell fishy in my opinion, but you can totally sub any other noodle you like.

Sam, High five! Another winner. I just used angel hair, because that's what I had on hand, but next time I'll try the shitake noo'les.. I had a few spoons of the fruit and veggie mix left, so I chopped them a lil finer and put it on crusty sourdough toasts, So good.

Looks like I'm going hunting for some noodles. I've not heard of these before and hopefully I can tolerate the 'fishy' aroma. You're recipe as always looks and sounds awesome, I've never had grilled pineapple before so this should be interesting. I don't know when I'll be able to try it as it's not my kitchen.

on a scale of 1-5 how weird are shirataki noodles ?? I am scared of them!

Haha! Well if 1 is "good ol' rice noodles" and 5 is "what is this madness!?", I would say maybe a 2 or 3. They are really not scary. They have little to no flavour, so it's what you add to them. The texture is very smooth, and they have a bit of a crunch when you chew them, not mushy at all. Personally, I like to boil them a little longer than the package recommends as I like the resulting texture better.

I really like those noodles too Sam, but I wish they would make an organic version of them. By their own admission (when I contacted them and asked,) they contain two powerful pesticides which I am unfortunately unable to process very well. =/ I am going to try this recipe with zucchini ribbons, it sounds fantastic!

I've tried those noodles, and while the flavor is fine (and the calorie content awesomely low), I could not get past the fishy smell of the noodles when you open the package. Before becoming vegan I was never a fish or seafood person, and these noodles have that same aroma, IMO. And they are quite pungent. I could immediately tell when I first opened the door that my husband was cooking these for dinner. I just can't go there, actually had to throw them away after the first couple of packages.
But the recipe looks wonderful, grilled pineapple is one of my favorites! I'll have to give grilled avocado a try next. I'll just have to find a different noodle option.

I think I tried the noodles you speak of because I was trying to do operation "hot bod" I think they were normal shirataki and they were so yuck smelling
