    Carrot Fries

    Carrots. Another orange food. I think its official, after my Vegan Mac and Cheese, and my Baked Sweet Potato Pancakes, this is the third recipe in a row that is orange. Apparently, I'm in an orange mood these days. I think this might have something to do with my job as an art director... orange is very trendy right now, you see. Just check out furniture stores and you will see grey couches with orange pillows. So you can totally be all trendy by serving up some orange food. If trends don't appeal to you, I know what will... fries! Who doesn't like fries? I like fries. Even tho fries are usually vegan, I thought we could up the ante a little by swapping out potatoes for carrots. Fun right? I despise boiled carrots. It's just about the saddest way to treat a carrot, so lets do the carrot some justice today and make it the star of the dish. Seasoned with a little spice, and roasted in the oven, these dudes make a super fun side dish to a veggie burger, veggie dog, or just as a delicious snack.

    Preheat oven to 400F (200C).

    Peel and chop your carrot in to fry like shapes.

    Put the carrot fries in a big bowl and add the olive oil and your spices, and then stir or toss to coat, making sure each fry is evenly coated in the oil spice mix.

    baked-carrot-friesDump the fries onto a baking dish and arrange them so they all fit without any of the fries overlapping. It's best if they aren't touching each other too so there is lots of air around each fry to help get them crispy.

    Bake for 30-40 minutes, taking them out every now and then to flip. They are done when the edges are brown.

    *Update: Some of you reported their fries taking less time to bake, so be sure to check them every 10 minutes to make sure they aren't burning... although I do love the burnt ones!

    Serve with dip of choice, I went with Vegenaise.

    A healthy and fun way to update your fries. Roasted in the oven and seasoned with yummy spices.

    Cook: 40 minutes mins

    Ingredients
     

    • 3 large carrots,, peeled and cut into fry shapes
    • 1 tablespoon olive oil
    • ½ teaspoon chili powder
    • 1 teaspoon thyme
    • ½ teaspoon salt
    • 1 pinch black pepper

    • OVEN: Preheat oven to 400F (200C).
      AIR FRYER: Preheat your air fryer to 370F (190C).
    • Put the carrot fries in a big bowl and add the olive oil and your spices, and then stir or toss to coat, making sure each fry is evenly coated in the oil spice mix.
    • Spread the fries onto a baking dish and arrange them so they all fit without any of the fries overlapping. It's best if they aren't touching each other too so there is lots of air around each fry to help get them crispy.

      Does this method work with the pre-cut carrot chips you find in the produce section? I find peeling and chopping veggies a real chore and usually not worth it.

      Excellent, took about 25 minutes in my toaster oven. I used 3 multicolored carrots, So fun and pretty, using plain and spiced up mayonnaise to dip in. Thank you for such a lovely recipe. I love carrots raw, now I love them baked, cause French fries are the bomb no matter the veggie you use!!

        Vegenaise is a brand of vegan mayonnaise. There are many other brands available now as well, and I also will have a recipe for vegan mayonnaise in my cookbook when it comes out.

      I made these without oil (we are on an oil free diet), and they still came out good. More like roasted carrot fries. I'm looking forward to trying them with a little ketchup. Might have to tone down the spices for my husband though.

        Glad you liked them ChelzF. Yeah, for the real crispy french fry feeling, I am afraid you will likely need the oil. Either that, or batter them, more like an onion ring.

        I know, aren't carrots just so awesome! Especially when turned into a french fry...well to be honest, I think ANY veggie turned into a french fry is pretty awesome! haha

      it takes a lot to get me to opt out of a sweet potato but these were worth the venture! They are firmer than a sweet potato but still with that crisp sweet earthy taste! yum! I tossed mine with dijon and olive oil before devouring them. Thanks girl!
