    Traditionally wedge salad is served with blue cheese dressing and bacon bits (making it not vegan), but to make my vegan version we make a homemade vegan blue cheese dressing which requires just 7 easy ingredients you likely already have in your kitchen. You will not believe the flavor of this dressing, it tastes just like blue cheese but it is completely dairy-free!

    For the bacon bits, you can either use store-bought or homemade vegan bacon bits. Surprisingly, a lot of store-bought bacon bits are accidentally vegan ( just check the ingredients to be sure). In the photos, I used my Shiitake Bacon recipe which is delish, but my Tofu Bacon Bits recipe, Quick & Easy Mushroom Bacon, or Tofu Chorizo Crumbles would all be super tasty options as well.

    What is wedge salad made of? Iceberg lettuce (cut into wedges), homemade vegan blue cheese dressing, vegan bacon bits, cherry tomatoes, and pickled red onions.

    How do you cut iceberg lettuce for wedge salad? take a head of iceberg lettuce and remove a few of the outer leaves if they are wilted and discard. Then chop the head of iceberg lettuce in half, and then chop each half in half again to make 4 wedges. Cut the core out of each wedge and discard.

    How do you eat wedge salad? with a fork and knife! Unlike many other salads that just require a fork, with a wedge salad you will want to slice into it with a knife to cut bite-sized pieces.

    How to Make Vegan Wedge Salad:

    To make the vegan blue cheese dressing: add all the dressing ingredients to a small bowl and mix to combine. Set aside.

    You can either use a vegan mayonnaise to make the dressing or for a lighter, oil-free, low-calorie option sub the mayo with plain vegan yogurt. I like almond yogurt.

    To prepare the salad: chop the head of iceberg lettuce in half, and then chop each half in half again to make 4 wedges. Cut the core out of each wedge.

    To assemble the salads: divide the lettuce wedges across four plates. Drizzle dressing over the wedge to taste. Sprinkle over the vegan bacon bits, cherry tomato slices, and pickled onions. Garnish with salt, black pepper, and dill if desired. Serve right away.

    Ingredients
     

    For the vegan blue cheese dressing:

    • ¾ cup vegan mayonnaise, (or sub plain vegan yogurt for a lighter version)
    • 1 - 3 tablespoons plant-based milk, (such as oat or soy)
    • 1 ½ tablespoons apple cider vinegar
    • 1 tablespoon nutritional yeast
    • 1 tablespoon white miso paste
    • ½ teaspoon onion powder
    • ¼ teaspoon dried dill

    For the wedge salad:

    • ¼ cup vegan bacon bits, homemade or store-bought, see notes
    • 1 head iceberg lettuce, cut into 4 wedges (see step 2)
    • 1 cup cherry tomatoes, sliced into coins
    • 2 tablespoons pickled onions, (or thinly sliced red onion), optional

      I love this recipe! I have been looking for a vegan blue cheese sauce for so long! I'm allergic to apple so hoping anyone can tell me what I could replace the apple cider vinegar with?
