How to Make Vegan Sugar Cream Pie:
Preheat your oven to 325°F (160°C).
Bake the pie crust for 10–12 minutes to partially bake it. Remove from the oven and set aside.
Make the pie filling: in a medium saucepan, whisk together the white sugar and cornstarch. Add the coconut milk and stir to combine. Dollop the butter on top (the butter will melt into the mixture as it cooks). set the saucepan over medium-high heat and cook, whisking often, until the mixture thickens, 5–10 minutes. remove from the heat and whisk in the vanilla. set aside.
Make the topping: in a small bowl, mix together the white sugar and cinnamon. set aside.
Pour the prepared filling into the pie crust, filling it three-quarters full. drizzle on the melted butter and evenly sprinkle with the cinnamon sugar. (If you have leftover filling, pour it into a container and pop in the fridge for a delicious pudding!)
Bake for 25 minutes. The pie will be bubbling and still very liquidy. Carefully remove from the oven and allow to cool on a rack at room temperature. Once cooled, move the pie to the fridge until set, about 3 hours, or overnight is best.

- 1 unbaked vegan pie crust, store-bought or homemade (page 79 in Craving Vegan) (gluten-free if preferred)
For the Pie Filling:
- ¾ cup white sugar
- ¼ cup cornstarch
- 1 can (13½ fl oz/ 400 mL) full-fat coconut milk OR 1¾ cups vegan culinary cream
- 3 tablespoon vegan butter
- 1 tablespoon vanilla extract
For the Topping:
- ¼ cup white sugar
- 1 teaspoon ground cinnamon
- 3 tablespoons melted vegan butter

I made this for thanksgiving and it turned out pretty good! I added almond extract in addition to the vanilla extract for extra flavor.
Would I be able to sub brown sugar for the white sugar? I’d like a deeper caramel flavor. Thanks!

Hi Alexa, so happy you enjoyed it! Brown sugar has more moisture than white sugar, which might affect the texture slightly. The filling could turn out a bit softer, but this is unlikely to be a significant issue in this pie, I am sure it will work out well. Enjoy!

Easy and delicious. I thought this was going to be harder than it was, or that it wouldn't 'set up' right, but it came out perfectly, and it was a huge hit last Thanksgiving. It's going on the menu for all of my big get-togethers!!

At the top of the recipe, it calls for 45 minute baking time.
At the end of the recipe, it's only 25 minutes.
WHICH IS IT?
i just made the uie and had to make a quick decision - I added 10 minutes....
It looks OK, should be OK - we'll know in a few hours.

The 45 minutes is total bake time and includes the time for partially baking the pie crust in step 2. We hope your pie turned out delicious!

Thank you - it might help posting it as "total baking time": 45 mins. (10-12 mins./crust; 25 mins./pie)!
My "custard" was a lot darker (from the vanilla) and since I used a 10" pie plate, slices were not as "generously" high. Next time, I will cut down to 2 Tbs. of vegan butter on top before sprinkling with sugar/cinnamon mixture....

I don’t think I’ve ever had the non-vegan version of this pie, so I can’t speak on how this compares to that. I will say that it was easy enough to make, but I think I would use this recipe as a pudding recipe instead. I felt that the custard had more flavor before it was baked.
