This post is sponsored by Corningware, who I love for their handy dandy Meal Mugs which are perfect for cooking and serving this Easy Vegan Bread Pudding!
My mom is a rock star. Seriously. Ok, well no, she isn't a slap-a-da-bass rock star, she is the get a million things done, deal with all stressful situations, do everything for everyone else, and still throw two giant Christmas parties (for both sides of the family), every year kinda rock star.
So I thought for a change she deserved a break, and I wanted to do something nice for her. So when Corningware asked me to throw a party (uh ok!), I decided I wanted to celebrate my mom as a little thank you for being such an awesome mom. ~Insert "awwws" in here~
Disclaimer: I swear friends, this wasn't intended to be a blondes only party, it just seemed to turn out that way!
From left to right we have my cousin (and friend) Gretty, close friend Eleanor, my mom Carolyn, my mom's long time friend Gay, me, and then Chickpea. Aren't we the sweetest group of blondes ever!?
When it comes to vegan bread pudding, some people (my mom) say you must include raisins, others (Eleanor) prefer it pretty plain and simple, while another (Gretty) might try to cram every single thing that will fit.
I decided the perfect solution would be to use durable stoneware Meal Mugs, which are dishwasher, refrigerator, freezer, and oven safe, to make individual servings of vegan bread pudding, and provide many optional add-ins. Perfect customizable vegan bread pudding!
How fun is that!? Yeah, pretty fun.
I gave everyone a Meal Mug full of baguette bread cubes, and let them add in anything they wanted which would be baked right into the vegan bread pudding. When everyone was done, I poured over the easy vegan bread pudding mixture, popped them in the oven, then popped open a bottle of bubbly for mimosas while we waited.
Yeah feeling pretty much the master of brunch right about now. ~brushes imaginary dust off of shoulder~
Then once they were all baked up and gorgeous, you could choose to put more add-ins on top if you liked, and then we all dove in and thoroughly enjoyed our vegan bread pudding. Rave reviews all around. Soft, creamy, decadent, cinnamon, the ultimate comfort food dessert. Makes for a pretty awesome bruch party!
To make the Easy Vegan Bread Pudding, slice up a baguette into small cubes. Divide the bread among the Meal Mugs. If you are only serving 1 or 2 people, feel free to divide the recipe, (this tool is handy), as the servings are individual so the recipe will bake perfectly either way!
Add in up to ¼ cup of treats- fresh berries, dried fruit, chocolate chips, or chopped nuts. Give it a toss.
Prepare the filling by adding everything to a blender and giving it a whizz. If you don't have a blender, you can add everything to a bowl and whisk well. Divide among the Meal Mugs then pop in the oven to bake for 28 to 35 minutes.
Remove from the oven and feel free to top with whatever you like. I even enjoy a splash of fresh soy cream. Omnomnom!

Ingredients
For the bread pudding:
- 1 baguette
- 2 cups plant-based milk, (such as soy or almond)
- 2 cups full-fat coconut milk
- ¾ cup brown sugar
- 3 tablespoons cornstarch
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
Optional Add-ins:
- dried fruit, (raisins, chopped apricots, chopped dates, coconut flakes)
- chopped nuts, (pecans, cashews, peanuts, walnuts, almonds)
- fresh fruit, (strawberry slices, raspberries, blueberries, blackberries, banana slices)
- vegan chocolate chips
- Soy, almond, or coconut cream, (for pouring on top once the vegan bread pudding is baked)
Instructions
- Preheat your oven to 350F (180C).
- Cut the baguette into small cubes and divide the bread cubes evenly among the Meal Mugs. You can now add up to ¼ cup of optional add-ins per mug that you would like baked into the bread pudding.
- Add all of the remaining vegan bread pudding ingredients to a blender and mix well. If you don't have a blender you can add everything to a bowl and whisk well, making sure the cornstarch is well mixed. Divide the batter evenly among the mugs.
- Bake the bread puddings for 28 to 35 minutes until you can see that there is still a bit of liquid around the bread, but not too much. Less baking time will make wetter bread pudding, longer baking will make a drier bread pudding. Remove from oven then add any toppings you desire, and enjoy!

This looks so good! I don't have any coconut milk right now, can I just only use plant milk? Can I replace it 1 to 1?
Joelle says
Would it be possible to do this with vegan croissants as a substitute for the baguette?
Victor Munoz says
Hi! This recipe looks amazing. How big a baguette did you use? Chances are I’d try to make it all in one dish, but don’t wanna over/under soak with liquid
Sam Turnbull says
A full-sized (350g) baguette. Enjoy!
Victor Munoz says
I just made this dish using oat milk and it was AMAZING! Thank you so much for this
Sam Turnbull says
Thrilled you enjoyed it so much, Victor!
April says
Would this turn out ok if I skipped the mugs and just baked the entire batch in a regular casserole dish?
Sam Turnbull says
Yes, but the baking time would be a little longer. Enjoy!
Helit Broza says
What size bagutte? Can I substitute the baguette for with a different bread,,and if I can what amount/size/?
Sam Turnbull says
I used this baguette, and you can substitute it for another bread of the same size, you just might have to adjust how much liquid you use depending on if the bread is drier or moister. Enjoy!

I had never made bread pudding before i tried this recipe, but my non-vegan boyfriend was craving it so when I found this recipe i HAD to try it.. it turned out ah-mazing!!.. I made a few minor adjustments just based on what I had in the house.. I used 1 can full fat coconut milk and since it’s a little less than 2 cups i added a little extra soymilk (but wasn’t precise about it (used Silk very vanilla) ..halved the vanilla extract (because of the soymilk) and added 1/2 tsp of salt.. not sure if the salt was necessary it’s just something I’m used to doing in dessert recipes.. also, mixed in frozen blueberries and topped with a drizzle of homemade blueberry syrup.. SOOO GOOD,. Thank you so much for this easy recipe..
Sam Turnbull says
Wonderful!! Thrilled you enjoyed it so much, Daryl 😀
Cate says
Uh oh!
Just found your awesome website while looking for a good vegan bread pudding recipe.
Coupled with the mimosas ... I'm in serious trouble. ;-}
Sam Turnbull says
Hahaha! Welcome, Cate 🙂

I love your recipes. ..I've tried them and they are always a success. I have a question. Non vegan bread pudding always have eggs to give it a pudding consistency. ..what can I use instead...I only see milk in your recipe...thanks
Sam Turnbull says
Thanks so much, Bree! In this recipe it's the cornstarch that gives it the pudding consistency 🙂
Bee says
oops, yes I saw it after I sent you the message thank you so much..i always use Arrow root so I guess it will be the same if I use that...right?
Sam Turnbull says
No problem 🙂 Yes, arrowroot should work. Enjoy!
Barbara Smith says
Gonna make this with Gluten free bread. I fat free coconut milk, but not full fat. Wonder what I would add to make up for the lost fat - coconut oil? How much? Thoughts?
My youngest is on a very restricted diet...
Sam Turnbull says
If you don't have full-fat coconut milk, light will probably work fine, it may just be less rich and creamy. I wouldn't try to add anything to replace it. Enjoy!
Barbara says
I used oat milk, and the reduced fat coconut milk like I said, and exchanged 1 for 1 agave juice for brown sugar and it is YUMMY! <> for posting this. it's been a hit!
Sam Turnbull says
Woohoo! So happy you loved it, Barbara!
Melissa says
Where did you get vegan baguette bread...it usually contains eggs?
Sam Turnbull says
Actually, most baguettes are totally vegan and usually just contain flour, water, yeast, and salt. I used an Ace Bakery baguette, but just check the ingredients as most will be vegan-friendly.
Anishka says
This was soo good. How lovely to know that Vegan food tastes this great!! Thank you so much for sharing!!!!
Sam Turnbull says
Woohoo! So glad you enjoyed it, Anishka!

This recipe looks and sounds delish! I am going to try it for Christmas brunch this year. I have a question though - if I wanted to do a large quantity of this in a 9x13 pan, how long do you think I would bake it for? Thanks! And Happy Holidays!
Sam Turnbull says
Yay! I hope you enjoy it Emily! I would say probably closer to 50 minutes. To see if it's done just use a spoon to pull away some of the bread to see how much liquid is in the bottom of the pan. You want some liquid (it will thicken more as it cools), but not so much that it's soupy. Enjoy!
Bethery says
I LOVE bread pudding! And you have cornered the market on cute with that 2nd picture - all eyes on Chickpea! Seriously, dangerously cute. (Can't let me dog see.)
Bethery says
p.s. Does it get custardy without something to do the part of eggs?
Sam Turnbull says
Hahaha! She is such an attention hog. Haha. It sure does get custardy 🙂 The cornstarch helps with that. Omnomnom.
Bethery says
Great. I'll make it too, then, and Chickpea deserves all that attention. (Oh, and I thought your cousin was your sister. You look a lot alike.)
Sam Turnbull says
Haha yeah, we do look really similar. We are also best friends, both vegan, and often dress similarly. Her husband almost always makes fun of us for being the same. Haha!
Alexandra Ogden says
I LOVE this idea! Totally perfect for me who loves dessert, but hates baking and measuring out everything perfectly!! Yay!
Sam Turnbull says
Hahaha awesome!! So happy it's right up your alley. Hope you love it as much as we did 🙂
Heidi says
What a sweet and interactive way to make a gathering even more fun! Thanks for sharing. I plan on trying this out very soon.
Sam Turnbull says
Thanks Heidi! It was a total blast, and everyone totally loved creating their own bread pudding. It was a great event. I hope you enjoy it as much as we did when you serve it up 🙂
Julie B says
Looks so delicious! I'm curious though if the baguette is dairy/egg free and if so, where might I find something so amazing? I can use those meal mugs for so many things....gonna get on Amazon and order them right now. By the way, Chickpea is a cutie!
Sam Turnbull says
Haha yeah, Chickpea is such and attention suck! The Meal Mugs are super handy, I have been enjoying eating out of them regularly. Perfect for munching on the couch! Yep, the baguette was dairy and egg free. The traditional ingredients of bread are just flour, water, yeast, and maybe salt. The are exceptions such as challah (egg bread), buns that have egg washes, or fancy cinnamon bun bread etc., but for the most part, you're pretty safe. Just check the ingredients to make sure. My baguette was Ace Bakery brand. Enjoy!
