    Sweet Potato Toast!?

    There is a new trend in town, and I had to investigate it immediately. The trend: Sweet Potato Toast! This isn't a bread made from sweet potato or anything complicated like that, this is simply slices of sweet potato that you pop right into your toaster! What? How? Who? Where? Why? Yes! Love!

    This trend has exploded across the internet recently. Downshiftology,  The Wonky Spatula, I Quit Sugar, and Tuulia all shared their own versions of Sweet Potato Toast goodness, where they baked the slices in the oven at 400F (200C) for about 20 minutes. But I loved Little Bits Of the most for the idea of popping the slices directly into the toast. Brilliant!

    Little Bits Of is a new blog (to me), and not entirely vegan, but totally worth checking out. Kelsey has some totally drool-worthy and vegan friendly recipes. Hello Cacao Tahini Freezer Fudge and  Skinny Tequila Squeeze, I just found my perfect Tuesday night. Be sure to check out the 3 ways she tops her Sweet Potato Toast, sub the tuna salad for a chickpea salad and they're all vegan!

    Obviously I had to try Sweet Potato Toast for myself immediately. Anything that easy and vegan friendly is a must-try for me!

    The Result: 

    If you are expecting the sweet potato to turn into a toast-like texture, crisp on the outside, and airy soft in the middle, this is not that. This is very much a slice of sweet potato that is soft, rich, and all things sweet potato. The slice holds together surprisingly well and doesn't flop or break too easily as I thought it might.

    You could easily pile this up with your favourite toppings, or you can go the route I preferred which was just a simple swipe of vegan butter (such as Earth Balance), a drizzle of maple syrup, and a sprinkle of powdered ginger. A combo that is pretty bomb if I do say so myself.

    After I posted this recipe, some people didn't seem to think it would really work! So I put this food trend to the test and made this video of my experiment.

    To make sweet potato toast, take a sweet potato. (I know, this recipe is so complicated).

    Very carefully slice the potato into ¼ inch slices. Once you get to the point the potato can't balance on the cutting board, I found it easiest to lay it flat, and to gently rotate the knife around the outside. Whatever method you choose, just be careful not to cut yourself!

    Pop your slices right on into your toaster. Boom!

    Set your toasted to the longest setting and be prepared to put it through a few cycles. My very cheap and un-wow worthy toaster took four full cycles before the potato was cooked through. Once toasted, top with your favourite dressings, make an open face sandwich, or just keep it simple with a smear of vegan butter. Yum!

    Ingredients
     

    • 1 sweet potato,, cut into ¼ inch slices
    • Any toppings you like!, (I like vegan butter, maple syrup, and powdered ginger)
    Prevent your screen from going dark

    Instructions
     

    • Be very careful slicing your sweet potato, don't cut yourself! Once you have your slices, pop them in the toaster. Every toaster will vary. Mine took four cycles at the longest setting before they were cooked. You can tell they are ready when the sweet potato is tender with a few browned spots.
    • Spread your "toast" with any toast like toppings you like. You could even make a sandwich! I played around and my favourite combo was a smear of vegan butter, a drizzle of maple syrup, and a sprinkle of powdered ginger. It tasted like a total celebration in your mouth!

      I tried this using my toaster oven (I don’t own a toaster) and these came out well. Instead of large slices, I cut the tubers into coins, which was easier for me to do and not cut myself
      I spread peanut butter on them and added a bit of salt - yum! No jam needed, the sweet potatoes are plenty sweet, but I suppose you could add some jam or fruit, perhaps some vegan butter, if you like.
      Next time I may try savory toppings, mashed green peas, perhaps, or other beans and top with salt and nutritional yeast.
      Thanks for your recipes, Sam, they are some of the best vegan recipes on the internet that I’ve tried!

      I would either use an actual toaster oven or maybe just lay your toasters on its side and find or make a pan out of an aluminum pie plate so you could possibly make an handle to make it easier to remove it and put it back in you might also be able to use dishes from an easy bake oven

        I agree with you 100% I like to take leftover sweet potatoes and eat them on actual toast, I've actually been doing that since I was a kid, after Thanksgiving I came up with the idea for my breakfast, It was way yummy

      Just tried this and it came out beautifully. I never loved spaghetti squash until finding this recipe…I’m now hooked and will be adding this into my meal plan a lot more. Thank you so much!

      I am making these tonight for our family Memorial Day party!!! So excited! I am going to try and use strawberries and make one larger cheesecake in my springform pan. I was curious, do you have to strain out all of the strawberry chunks or does it not wind up chunky? I'm guessing I'll see why you strain it when I'm at that step, but just curious!

I'm sure you meant to comment on a different recipe, but I'm not sure which one as I have a few recipes using strawberries.
