Really delicious. Even better the second and later days. Used it for caprese salad. Plan to try with pizza when it cools off here in the northern hemisphere!

As usual, when I try your recipes after trying others yours are the best tasting and easiest to make. I learned early on in my vegan journey to stick with your seitan recipes. (Yes I love your Seitan School) Now I know to stick with your cheese recipes. My bocconcini balls turned out great!

Thanks Sam for providing instructions using agar agar. Kappa carrageenan just freaks me out and takes a bit of extra effort to procure. I appreciate you proactively addressing concernsaround using it and plan to test drive this recipe tonight.

In reply to Emma. Thanks Emma! I would freeze the balls after they have set and sat in the brine for at least one hour. Remove the balls from the brine, wrap well, and freeze. Thaw in the fridge overnight. You could also make a fresh batch of brine and thaw the balls in the brine in the fridge overnight for the best taste and texture. I hope that helps!

Hi Sam, I have a question: if I want to freeze the balls, should I include the brine or do you freeze it without the brine? And the consistency doesn’t change when thawed again? I am looking forward to see how this recipe turns out! (I absolutely LOVE your nacho cheese so I’m hoping this one is just as good 😉 )
