I am so happy to find a recipe for butternut squash soup where you don't have to peel the squash! I can't rate the recipe because I haven't tried it yet, but plan to very soon! Just a suggestion, instead of discarding the seeds, roast them and add them to each bowl of soup.

My husband and I are trying a new approach to dinner-making, each being responsible a week at a time. Today was the beginning of my week, but I had an extremely busy schedule despite it being my day off. I was at a loss of what to make and then I remembered some pumpkin I had pureed and then froze last fall after taking down the autumn decorations. Thankfully it was still good and it went beautifully in this recipe, no additional blending necessary. It was absolutely scrumptious and a big hit with both my husband and me, but it took minimal time. I served it with some Greek-style potatoes and crusty garlic toast and it filled us up nicely. Thank you!

Made this the other night and it was amazing! Perfect for this time of year. I used homemade cashew cream in place of the coconut milk. Thanks for the recipe.

I am so excited to try this new recipe!
My family and I are big soup eaters during these cold months and I know this one is going to become another one of our favorites!
In a pinch, could I also use cashew cream in place of the coconut milk?

How long does the soup keep if frozen? Do you need to thaw it before reheating?

(Since it's just me, and sometimes my mother, I'll need to freeze some of it.)

Wow! You don't have to peel the squash? I've been making this soup in my Instant Pot for years. My recipe is very similar. I use Olive Oil and coconut milk. I will definitely try this next time and try your seasonings as well.
